I made a unique shaped coconut scones by folding the dough and baking it~
I think it can be eaten lightly because it is savory and has a good texture by adding coconut.

I wanted to bake it in a different shape, so I cut the dough into a circle and folded it twice and baked it, but it created a space in between and it was baked and it was crispy.

I think the other side except the bottom is coated in sugar and baked to make it visually more delicious.
It’s covered in sugar, but it’s not too sweet, and the savory taste of coconut and the sweetness of sugar go well together.

It’s fun to see them puffing in the oven!

Coconut Scones

Ingredients

  • 250g Cake flour
  • 30g Coconut powder
  • 8g Baking powder
  • 25g Sugar
  • 2g Salt
  • 90g Cold unsalted butter
  • 50g Egg
  • 60g Milk
  • 2g Vanilla extract

Instructions

  1. Mix soft flour, baking powder and coconut powder, add sugar and salt and mix.
  2. Add cold unsalted butter, mix flour and butter until they are small, then add eggs, milk, and vanilla extract and combine into a ball.
  3. Spread the dough out, cut it in half, and repeat it 3 times. Then, spread it out flat and harden it in the refrigerator for about 1 hour.
  4. Cut the dough into a 10cm round mold, fold it in half, and fold it in half more, then sprinkle with sugar and place on the oven pan.
  5. Bake in an oven preheated to 185 degrees for 20 minutes.
