Chocolate Tiramisu Recipe

Chocolate Tiramisu is on the menu in Cooking Tree, and we are going to teach you how to make this delicious recipe from scratch!

I made tiramisu full of chocolate flavor by putting chocolate cream and ganache on a chocolate sheet~
Instead of baking the ladyfingers one by one, bake them in a large size and cut them according to the size of the mold you are using.

I finished it with chocolate ganache on the top, and it looks pretty and tastes better as it is smooth and shiny~
I really like the combination of the chocolate-flavored cream and the coffee-soaked sheet.

It has a different feel from the existing tiramisu, and the taste of chocolate is new, so if you like chocolate, I think it would be good to try making chocolate tiramisu~~

Chocolate Tiramisu

Ingredients

  • 2 Egg yolks
  • 20g Sugar
  • 2g Vanilla extract 
  • 2 Egg whites
  • 40g Sugar
  • 52g Cake flour 
  • 8g Cocoa powder 
  • 4g Corn starch
  • 2g Baking powder 
  • 5g Sugar + 5g Powdered sugar

  • 70g Water
  • 12g Sugar
  • 5g Instant coffee powder

  • 300g Mascarpone cheese
  • 5g Vanilla extract 
  • 15g Cocoa powder 
  • 300g Whipped cream (+65g sugar)

Ganache (100g Dark chocolate + 100g Whipping cream)

Instructions

  1. Add sugar and vanilla extract to egg yolk and mix until sugar dissolves.
  2. When large bubbles appear while whipping the egg white, divide the sugar into 2 portions and whip to make a soft meringue. Add the egg yolk mixture and whip lightly to finish.
  3. Sift the soft flour, cocoa powder, corn starch, and baking powder, mix, pan in an oven pan, mix sugar powder and sugar, and sprinkle generously twice.
  4. Bake in an oven at 180 degrees (190 degrees for 20 minutes preheated for 20 minutes) for 15 minutes, cool, and cut according to the size of the mold being used.
  5. Make syrup by mixing water, sugar, and instant coffee powder.
  6. Add vanilla extract to mascarpone cheese, loosen gently, sieve cocoa powder, and mix.
  7. Add sugar and whipped cream to about 60% and mix.
  8. Put the sheet in the mold, moisten it with coffee syrup, squeeze the cream, put the sheet in, put the cream on top, harden it in the refrigerator for 3 hours, then pour the ganache on top to finish.
