Chocolate Meringue Cake Recipe

I made a baked chocolate cake by putting meringue on top of a thick chocolate cake~

It is a method of baking the chocolate cake first and then adding the meringue later to bake a little more, but I think it is a different cake because the texture of the second layer is different The chocolate cake is fluffy and the meringue is like a cloud, so it blends well in your mouth and is delicious!

For meringue, I used cocoa powder and whipped it hard to make a light chocolate color.
The top of the meringue is slightly crispy and the inside is moist, so it feels good when you cut it with a fork.

I think it’s more delicious to eat together than to eat the second floor separately.

Chocolate Meringue Cake

Ingredients

  • 200g Dark chocolate
  • 70g Unsalted butter
  • 2 Egg yolks
  • 30g Sugar
  • 120g Warm milk
  • 50g Warm heavy cream
  • 120g Cake flour
  • 10g Cocoa powder
  • 2 Egg whites
  • 80g Sugar
  • 3g Vanilla extract
  • 3g Cocoa powder
  • 3g Corn starch

Instructions

  1. Melt dark chocolate and unsalted butter in the microwave for about 1 minute, then add egg yolk and sugar and mix.
  2. Add warm milk and fresh cream and mix. Sift the soft flour and cocoa powder and mix.
  3. Pour into a 16cm mold, flatten, and bake in an oven preheated to 170 degrees for about 30 minutes.
  4. Whip the egg whites with vanilla extract and when large bubbles appear, divide the sugar and whip to make a meringue with horns.
  5. Sift cocoa powder and cornstarch, mix, place on the baked chocolate cake and bake in an oven preheated to 150 degrees for 25 minutes.
