Chocolate Chip Cookies + Brownie Cookies Recipe

I put brownie cookies with nice cracks on top of chocolate chip cookies and baked them together~
The brownie cookies are plump and cracked so they have a soft texture, and the chocolate chip cookies underneath give them a crispy texture, so it’s really delicious to eat together.

For brownie cookies to crack well, the temperature is more important than I thought.

There is a chocolate chip cookie at the bottom, so the brownie cookie does not spread too much and has the effect of being baked more plump, making it more tasty and chewy.

Chocolate Chip Cookies + Brownie Cookies

Ingredients

  • 25g Unsalted butter
  • 25g Brown sugar
  • 5g Dark brown sugar
  • 0.5g Salt
  • 15g Egg
  • 1g Vanilla extract
  • 60g Cake flour
  • 0.5g Baking powder
  • 0.5g Baking soda
  • 25g Dark couverture chocolate

  • 120g Dark couverture chocolate
  • 50g Unsalted butter
  • 60g Egg
  • 65g Brown sugar
  • 1g Salt
  • 45g All-purpose flour
  • 5g Cocoa powder
  • 2g Baking powder

Instructions

  1. Soften unsalted butter, add brown sugar, brown sugar, and salt, mix, then add egg and vanilla extract and mix.
  2. Sift the soft flour, baking powder, and baking soda and mix lightly, then cut into small pieces of dark couverture chocolate and mix.
  3. Put it on parchment paper, spread it out, and harden it in the refrigerator for about 30 minutes.
  4. Put a bowl of dark couverture chocolate and unsalted butter in water at about 70 degrees, melt it, and set the chocolate temperature to about 40 degrees.
  5. Add brown sugar and salt to the egg and whip it at high speed for about 2 minutes to make a light-colored foam. Add the chocolate mixture and mix well.
  6. Sift the flour, cocoa powder, and baking powder, mix slowly so as not to form too many bubbles, and cool the dough to about 24 degrees.
  7. Cut the chocolate chip cookie dough with a 6cm round cutter, put it on the oven pan, scoop the brownie cookie dough with a 5cm scoop, and bake in an oven preheated to 180 degrees for 15 minutes.
