I made a chocolate and green tea sponge cake sheet that is often used as a cake sheet! I used various methods to make Genuise, but I found this method to be the most fluffy and moist.

Melted butter and milk are mixed with cocoa powder or green tea powder, then put into the dough and mix.

There is less powder agglomeration, and the color is uniform and seems to be baked beautifully. In this recipe, the most important thing is to whip the meringue to a glossy finish.

If the meringue is whipped crispy, there will be many holes in the cross-section of the sheet and it will not rise well. It is better to whip the meringue well again and use it to make it.

Ingredients

Chocolate cake sheet

  • 4 Egg white
  • 80g Sugar
  • 4 Egg yolk
  • 1/2ts Vanilla extract
  • 100g Cake flour
  • 10g Cocoa powder
  • 1/2ts Baking powder
  • 45g Melted butter
  • 45g Milk

Green tea cake sheet

  • 4 Egg white
  • 80g Sugar
  • 4 Egg yolk
  • 1/2ts Vanilla extract
  • 103g Cake flour
  • 7g Green tea powder
  • 1/2ts Baking powder
  • 40g Melted butter
  • 45g Milk

Instructions

  1. While whipping the egg whites, when large bubbles appear, add sugar in 2-3 batches and whip to make meringue.
  2. Divide the egg yolk and mix. Add vanilla extract and mix.
  3. Sift the soft flour and baking powder and mix.
  4. Add cocoa powder (or green tea powder) to melted butter and milk and mix.
  5. Add a little of this dough to (4) and mix.
  6. Add (5) to this dough and mix.
  7. Pour into the mold, remove air bubbles, and bake in an oven preheated to 170 degrees for 35 minutes.
