Cherry Pound Cake Recipe

Cherry Pound Cake is on the menu in Cooking Tree, and we are going to teach you how to make this delicious recipe from scratch!

I made a moist and fragrant cherry pound cake with cherry flesh~
Baked in a small donut mold with a shape, it is cute and adorable, so I think it goes well with cherries~

It doesn’t swell too much when baked with cherry flesh, so it’s okay to panning about 90%~^^

When the white glaze is poured, it flows beautifully according to the shape, so it is simple yet pretty.
Adding a cherry in the middle makes it a point and the color is pretty~

It doesn’t have a crunchy pound cake texture, but it’s light and moist, so I think you can eat it without pressure.

Cherry Pound Cake

Ingredients

  • 90g Unsalted butter
  • 30g Sugar
  • 2 Egg yolks
  • 2g Vanilla extract
  • 90g Cake flour
  • 5g Baking powder
  • 2 Egg whites
  • 40g Sugar
  • 25g Cherry jam
  • 6~7 Cherries
  • 50g Powdered sugar
  • 10g Milk

Instructions

  1. Soften unsalted butter, add sugar and mix, then add egg yolk and vanilla extract and mix.
  2. Sift the soft flour and baking powder and mix.
  3. Whip the egg whites and when large bubbles appear, divide the sugar into 2 portions and whip to make a soft meringue.
  4. Divide the meringue into the dough in 2-3 batches, mix, add cherry jam, mix, and put the dough in a piping bag.
  5. Coat the mold with butter and sprinkle with flour.
  6. Remove the seeds of the cherry, chop it into small pieces, drain the water with a kitchen towel, and sprinkle lightly with flour to coat.
  7. Knead the dough in the mold, put chopped cherries on it, and then knead the dough again.
  8. Bake for 20~23 minutes in a 180 degree preheated oven and cool.
  9. Add milk to sugar powder and mix to make a glaze, and sprinkle on the cooled pound cake for decoration.
