Cherry Blossom Cookie Choux (Cream puff)

Ingredients

(10ea)

Biscuit

  • 30g Butter
  • 38g Sugar
  • 38g Cake flour
  • Red food coloring

Choux

  • 30ml Water
  • 30ml Milk
  • 27g Butter
  • 1g Salt
  • 36g Cake flour
  • 55g Egg
  • 170g whipped cream (+10g sugar, 30g Strawberry puree)
  • 30g whipped cream for decoration (+5g sugar)
  • Sprinkle

Instructions

Biscuit:

  1. After softening butter, add sugar and mix.
  2. Sift the soft flour and mix, then add red food coloring and mix to make a light pink color.
  3. Roll flat and harden in the refrigerator for 30 minutes.

Choux

  1. Put water+milk+butter+salt in a pot and boil it until the butter is completely dissolved, then remove from the heat.
  2. Sift the soft flour, mix, put on low heat, and heat with stirring until a film forms on the bottom.
  3. Add eggs, mix well and place in a piping bag.
  4. Pan in an oven pan, dip biscuit dough on top, and bake in an oven preheated to 180 degrees for 20~22 minutes.
  5. Add strawberry puree and sugar and fill the inside with whipped cream.
  6. Garnish with whipped cream and sprinkles.
