Castella Pancake Recipe

I made the castella pancakes from the lonely gourmet~
It’s a different cake baked with castella dough in a skillet pan, but I think it catches the eye just with its visuals~

You can feel the chewy texture by adding honey and kneading it with strong flour.
When you bake it and take it out of the oven, it swells up really well, but it subsides over time, but the texture is moist and fluffy, so it’s really delicious~

The skillet pan has good thermal conductivity, so it inflates well, but if you bake it in another pan, it will puff up a little less If you want to eat softer and more moist, you can reduce the baking time by 2-3 minutes.

Castella Pancake

Ingredients

  • 2 Egg yolks
  • 20g Honey
  • 2g Vanilla extract
  • 15g Vegetable oil
  • 30g Milk
  • 40g Bread flour
  • 2g Baking powder
  • 2 Egg whites
  • 45g Sugar

Instructions

  1. Add honey and vanilla extract to egg yolk and whip until foamy.
  2. Add vegetable oil and milk and mix, then sieve strong flour and baking powder and mix.
  3. Whip the cold egg whites and when large bubbles appear, divide the sugar into 2 portions and whip to make meringue with soft horns.
  4. Divide the meringue into the yolk dough in 3 batches and mix. Pour the batter into the mold with unsalted butter and flatten it.
  5. Bake in an oven preheated to 180 degrees for 6 minutes, then take out the cake, make a cross cut, and bake at 170 degrees for another 18-20 minutes.
