Butter Cream Cookie Recipe

I made coffee langue de chat with coffee buttercream sanded.
It’s delicious to eat thinly grilled langue de chat alone, but I think it’s good because you can eat it softly by sandwiching buttercream with a subtle coffee scent.

The cookie dough is simple and the cream is simple, so you can make it in no time.
I squeezed the dough into a 3.5cm diameter macaron pan and baked it, but it would be nice to make it in various sizes and shapes.

Butter Cream Cookie (Coffee Langue De Chat)

Ingredients

  • 45g Egg white
  • 2g Vanilla extract
  • 0.5g Instant coffee powder
  • 35g Melted unsalted butter
  • 25g All-purpose flour
  • 20g Almond powder
  • 50g Powdered sugar

  • 5g Hot milk
  • 1g Instant coffee powder
  • 40g Unsalted butter
  • 60g Powdered sugar

Instructions

  1. Add instant coffee and vanilla extract to egg whites and mix to dissolve.
  2. Add melted butter and mix, then sift sugar powder, plain flour, and almond powder and mix.
  3. Coat the oven pan with butter, squeeze the dough, pan it, and bake it in an oven at 160 degrees for 9 to 10 minutes.
  4. Add warm milk to instant coffee, melt it, and whip butter at room temperature.
  5. Add powdered sugar, mix with a spatula, whip sufficiently, add melted coffee and whip.
  6. After sanding the coffee cream on the langue de chat, slightly harden it in the refrigerator.
