Basic Sponge cake sheet (Genoise) Recipe

In Cooking Tree, we’re serving up a Basic Sponge cake sheet (Genoise), and we’ll show you how to make it from scratch.

I made a fluffy sponge cake sheet! It cuts well, so I think it’s good to use it as a basic cake sheet~ Remove the sheet from the oven and let it cool after removing it from the mold.

After it cools down, cut it into desired size and use it. I’ve been making cake sheets almost in this way these days~

Sponge cake sheet (Genoise)

Ingredients

Basic Sponge cake

  • 4 Egg yolk
  • 45ml Milk
  • 40g Melted butter
  • 4 Egg white
  • 100g Sugar
  • 110g Cake flour
  • 1/2ts Baking powder

Chocolate sheet

  • 4 Egg yolk
  • 45ml Milk
  • 40g Melted butter
  • 4 Egg white
  • 100g Sugar
  • 100g Cake flour
  • 10g Cocoa powder
  • 1/2ts Baking powder

Green tea sheet

  • 4 Egg yolk
  • 45ml Milk
  • 40g Melted butter
  • 4 Egg white
  • 100g Sugar
  • 103g Cake flour
  • 7g Green tea powder
  • 1/2ts Baking powder

Instructions

  1. Put the egg yolk in a bowl and loosen it, then add milk + melted butter and mix.
  2. Put the egg white in another bowl and whip it. When a large bubble appears, divide the sugar in 3 batches and whip it to make a meringue.
  3. Sift the flour and mix, then add the egg yolk mixture and mix.
  4. Pour the batter into the pan and hit the bottom 2-3 times to remove air bubbles. Bake in an oven preheated to 180 degrees for 35-40 minutes.
