Baked green tea (matcha) doughnut Recipe

Fresh green tea scent and savory butter taste! And sweet chocolate mixed together to make a melting green tea tigre~ Originally, chocolate chips were put in the dough and baked, so it was called tigre because its shape resembles a tiger pattern.

I baked it without adding chocolate chips for a clean green tea color~ When cut, the cross-section is clean and pretty, I think it’s a delicious snack ^^ It is better to enjoy it with coffee or various teas~

Baked green tea (matcha) doughnut

Ingredients

  • 75g Butter
  • 70g Egg white
  • 10g Corn syrup
  • 30g Sugar
  • 1/4ts Vanilla extract
  • 65g Almond powder
  • 10g Cake flour
  • 8g Green tea powder
  • 1/4ts Baking powder
  • Ganache (chocolate 30g + fresh cream 30g)

Instructions

  1. Put the butter in a pot and heat it until it turns brown, then filter it through a sieve and cool it.
  2. Put egg white and oligosaccharide in a bowl and mix, then add sugar and vanilla extract and whip until foamy white.
  3. Sift almond powder, soft flour, green tea powder, and baking powder and mix, then add butter and mix.
  4. Put the dough in a pastry bag, pan it in a buttered pan, and bake it in an oven preheated to 170 degrees for 12 minutes.
  5. Fill the middle with ganache.

For 4 pieces of 7cm in diameter
