Baked Matcha Cheesecake Recipe

I made a fresh baked green tea cheesecake topped with cream cheese cream~

It’s a cheesecake with whipped cream, so I think it’s a little more savory and soft~^^
When I eat it with a lot of cream on top, it looks cleaner and has a rich feeling. It was nice to see the subtle color of green tea powder lightly sprinkled on the cream~*^^*

The green tea flavor is not strong and it is mild, so I think it is a green tea cheesecake that can be eaten without burden.

Baked Matcha cheesecake

Ingredients

  • 60g Crushed oreo
  • 20g Melted unsalted butter
  • 250g Cream cheese
  • 60g Sugar
  • 2 Egg
  • 200g Whipping cream
  • 15g Lemon juice
  • 15g Cake flour
  • 15g Matcha powder
  • 200g Cold cream cheese
  • Whipped cream (150g whipping cream + 30g sugar)

Instructions

  1. Remove the cream, mix the crushed Oreos and melted unsalted butter, then press firmly on the bottom of the mold to spread it flat.
  2. Soften the cream cheese, add sugar and mix, then add the egg and mix.
  3. Add fresh cream and lemon juice and mix, then sift the soft flour and green tea powder and mix.
  4. Filter through a sieve, pour into a mold, bake in an oven preheated to 170 degrees for 45 minutes, and cool.
  5. Lightly loosen the cold cream cheese, add whipped cream and mix to make cream cheese cream. (If you use a hand mixer, you can make a softer cream a little easier~^^)
  6. Put the cream on the cooled cake and put it in the refrigerator to cool, then sprinkle sugar powder and green tea powder.
