I made a baked cheesecake with sweet apple stew and topped with fragrant soboro. Apples and soboro add texture, so itβs much more delicious than just cheesecake~*^^*
On top, I dried and decorated mini apples, so I think it gives off a feeling of autumn.
The cheesecake dough is so thin that it looks like the soboro will all sink, but it rises to the top and bakes more deliciously~
I think the savory taste of soboro goes really well with cheesecake~
It is full of apples, so it has a rich feeling and is a pretty cheesecake with a cross section~^^

Ingredients
- 1 Apple
- 30g Sugar
- Cinnamon powder
- 5g Lemon juice
- 50g Almond powder
- 30g Cake flour
- 30g Sugar
- 30g Unsalted butter
- 40g Crushed Digestive cookie
- 15g Melted unsalted butter
- 100g Cream cheese
- 50g Plain Yogurt
- 5g Lemon juice
- 25g Powdered sugar
- 1 Egg
- 8g Corn starch
- 100g Whipping cream
Instructions
- Slice the mini apples and bake in an oven at 100 degrees for 60 minutes to dry.
- Cut the peeled apples into small pieces, add sugar, cinnamon powder, and lemon juice, boil them, and then cool them.
- Put almond powder, soft flour, and sugar in a bowl and mix, then add unsalted butter and mix by hand until it becomes soboro. Put it in the refrigerator.
- Add melted unsalted butter to the crushed Daije cookies, mix, press firmly on the bottom of the mold, and place in the refrigerator.
- Soften the cream cheese, add plain yogurt and lemon juice, mix, add sugar powder and mix, then add the egg and mix.
- Add cornstarch and mix, add whipped cream and mix.
- Put the stewed apples on the crust, and then put the cheesecake batter through a sieve and put the soboro.
- Bake in an oven preheated to 160 degrees for 30 minutes, at 120 degrees for 30 minutes, and at 190 degrees for 5 minutes, then cool at room temperature and then cool in the refrigerator.
- Decorate with dried apples.
