– 2 Egg yolk – 20g Melted butter – 25g Warm milk – 3g Instant coffee powder – 1/2ts Vanilla extract – Meringue (2 Egg white + 50g sugar) – 55g Cake flour – 1/4ts Baking powder – Chilled Ganache (200g chocolate + 100g fresh cream) – 150g whipped cream (150g cream + 15g sugar) – Sugar syrup
1. Pour warm milk into instant coffee powder to melt it. 2. Beat the egg yolks in a bowl, then add melted butter, coffee milk, and vanilla extract and mix.
3. Add 1/2 of the meringue and mix. 4. Sift the soft flour and baking powder and mix. 5. Add all the remaining meringue, mix, pour into the oven pan, remove air bubbles, and bake in an oven preheated to 180 degrees for 30 to 35 minutes.
6. Make vanilla and chocolate sheets in the same way. 7. Whip the cold hardened ganache until creamy.
8. Place a chocolate sheet on a rotating plate, apply sugar syrup, and then apply whipped cream. 9. Place the coffee sheet, apply syrup, and apply whipped cream.
10. Put vanilla sheet on top and apply syrup. 11. Apply ganache cream on the top and sides. 12. Give the shape with a spatula.
