Souffle Omelette with 2 Eggs

Ingredients

  • 2 Eggs
  • a pinch of Salt
  • 10g (2 tsp) Sugar

  • Cooking oil
  • Maple syrup

Instructions

First omelet (with whites and yolks)

  1. Separate the eggs into whites and yolks, add a pinch of salt to the yolks and mix well.
  2. Whip the whites and when they become a little frothy, add a little sugar to make a meringue.
  3. Add the yolks to the meringue and mix gently with a spatula.
  4. Preheat a skillet over very low heat and add a little oil, then add the batter and spread it out.
  5. Cover and cook for about 5 minutes (until the meringue has puffed up, about 1 minute).
  6. uncover, fold in half and let cook, rotating the edges.
  7. Enjoy with maple syrup.

Second omelet (without mixing the whites and yolks)

  1. Separate the eggs into whites and yolks, add a pinch of salt to the yolks and mix well.
  2. Whip the whites and when they become slightly frothy, add a little sugar to make a meringue.
  3. Preheat a frying pan and add a little oil over very low heat.
  4. Add the yolks and spread them out, then spread the meringue on top.
  5. Cover and cook for about 5-6 minutes, then remove.
  6. Cut in half, layer, and enjoy with maple syrup.
