In Cooking Tree, 2 flavors of Butter Cookies are on the menu, and we’ll show you how to make it from scratch.

I made 2 flavors of cookies with lemon and Earl Grey, parmesan cheese, and sun-dried tomatoes~.
The combination of these two ingredients enhances the aroma and flavor of the cookies.

I’ve been eating sundried tomatoes a lot lately, and they’re delicious on toast or bread, so I decided to add them to these cookies. You can find them at any supermarket or department store.

If you don’t have sundried tomatoes, you can also use parmesan cheese and garlic powder.
The simple shape of these cookies makes them a great gift idea.

Ingredients

  • 100g Unsalted butter
  • 55g Powdered sugar
  • 1g Salt
  • 18g Egg yolk
  • 3g Vanilla extract
  • 150g Cake flour
  • 60g Almond powder

  • 1 Lemon zest
  • 1g Earl grey powder

  • 2 Sun dried tomato
  • 10g Parmesan cheese powder

Instructions

  1. Beat the room temperature softened butter with a hand whisk and add the powdered sugar and salt.
  2. Add the egg yolks and vanilla extract and mix lightly.
  3. Sift in the flour and ground almonds and mix with a spatula.
  4. Scoop 170 grams of the batter into another bowl and add the earl grey flour and lemon zest to the remaining batter.
  5. Mix evenly and add the chopped sun-dried tomatoes and grated Parmesan cheese to the reserved dough.
  6. Shape into 1 cm thick squares and chill in the refrigerator for about 1 hour.
  7. Cut into 3-centimeter squares, place on a baking sheet and bake in a 180-degree oven for about 15 minutes.
    (preheat 200 degrees)
